Matcha is gemalen groene thee van de fijnste soort die maar één keer per jaar geoogst wordt. De theeplant wordt afgedekt voor de groei van nieuwe blaadjes, zodat de plant extra veel bladgroen ontwikkelt.

Deze top matcha van de eerste pluk uit Kakegawa verdient een plek bij Roppongi!

Het is een mix van 2 cultivars, Kanayamidori en Yabukita. De term "cultivar" verwijst naar een specifiek gekweekte variëteit van een plant, in het geval van groene thee is dat de Camelia Sinensus. Deze theeplant kent verschillende cultivars die de juiste theebladeren leveren voor de productie van de perfecte thee. Elke cultivar heeft zijn eigen, unieke, kenmerken, zoals smaak, aroma en groeigewoonten, je kunt het een beetje vergelijken met de druivenplant die ook heel veel variëteiten kent. 

Kanayamidori is een Japanse theecultivar met een rijk umami-profiel, een heldere groene kleur en een hoge concentratie aminozuren, dat geeft deze matcha haar natuurlijke zoetheid en diepte in smaak. 

De Yabukita geeft de matcha nog een extra smaak-boost.


Bereiden:

  • Zeef de matcha,
  • schep 1-2 theelepels poeder in een kom,
  • schenk er voorzichtig 80ml water met een temperatuur van 80 C over,
  • meng met een klopper tot er een fijne schuimlaag ontstaat.
