Caballito Cerrero is een Tequila-bedrijf opgericht in 1968 door Don Alfonso Jimenez Rosales. Het wordt beschouwd als een van de beste tequila-distilleerderijen ter wereld. Ze zijn vastbesloten om Tequila op de traditionele manier te produceren en dat betekent soms dat ze met de Regulatory Council del Tequila (CRT) in botsing komen. Om deze reden passen sommige van hun traditioneel geproduceerde tequila's niet binnen de richtlijnen van wat legaal tequila mag worden genoemd. Agave Spirit is daarom de benaming, een brug tussen tequila en mezcal.
