Viene vinificato e lasciato maturare in vasche di acciaio inox per tre o quattro mesi. È pieno di polpa e morbido. L'Irpinia Fiano DOP di Ciro Picariello è un vino da non trascurare: non è sempre detto che da una terra vocata per il vino, come lo è lIrpinia, si possano ottenere solo ottimi prodotti. In questo caso, invece, il bersaglio è stato centrato.
Si adatta perfettamente a preparazioni a base di pesce di mare. Buono con il branzino al sale. Da provare con la pasta con i piselli.
