Most of the fruit is whole cluster pressed, while the final few passes are foot trodden and left to soak without temperature control. Most of the fruit is whole-cluster pressed, while the final few passes are foot-trodden and left to soak without temperature control. Around 60% of the total volume was fermented and aged in 500L Hungarian oak barrels. The remaining liters were fermented in ceramic amphorae. These two batches were blended with their lees and a small dose of sulfur before being bottled unfiltered. Jónás lives somewhere between a skin-contact and a white wine.
